    List of Ingredients


    • 1/2 cup dry red wine
    • 1/4 cup packed brown sugar
    • 3 Tbsp. water
    • 3 Tbsp. vinegar
    • 3 Tbsp. catsup
    • 1 Tbsp. olive oil (or other cooking oil)
    • 1 Tbsp. soy sauce
    • 1 clove garlic (minced)
    • 1 tsp. curry powder
    • 1/4 tsp. ground ginger
    • 1/4 tsp. pepper


    Instructions


    1. Mix all ingredients together and marinate a 4-5 lb. pork loin roast overnight in large bowl.
    2. Drain meat reserving 1 cup marinade and set aside.
    3. Place meat on rack in shallow roasting pan.
    4. Bake at 325 degrees for 2-3 hours or until meat thermometer shows 170 degrees.
    5. In small pan, combine 1/4 cup cold water and 2 Tbsp. cornstarch.
    6. Add reserved marinade and bring to a boil over medium heat.
    7. Reduce to low heat and cook until thick and bubbly.
    8. Slice pork roast and top with marinade.


    Final Comments


    This is good with rice or noodles.
