Pork Roast

List of Ingredients
- 1/2 cup dry red wine
- 1/4 cup packed brown sugar
- 3 Tbsp. water
- 3 Tbsp. vinegar
- 3 Tbsp. catsup
- 1 Tbsp. olive oil (or other cooking oil)
- 1 Tbsp. soy sauce
- 1 clove garlic (minced)
- 1 tsp. curry powder
- 1/4 tsp. ground ginger
- 1/4 tsp. pepper
Instructions
- Mix all ingredients together and marinate a 4-5 lb. pork loin roast overnight in large bowl.
- Drain meat reserving 1 cup marinade and set aside.
- Place meat on rack in shallow roasting pan.
- Bake at 325 degrees for 2-3 hours or until meat thermometer shows 170 degrees.
- In small pan, combine 1/4 cup cold water and 2 Tbsp. cornstarch.
- Add reserved marinade and bring to a boil over medium heat.
- Reduce to low heat and cook until thick and bubbly.
- Slice pork roast and top with marinade.
Final Comments
This is good with rice or noodles.
