Mexican Rice

List of Ingredients
- 3 Tbsp. cooking oil
- 1 cup uncooked long grain rice
- 1 small onion (finely chopped)
- 1 small green or red pepper (chopped)
- 1 - 8 oz. can tomato sauce (or Rotel tomatoes, drained)
- 1 cup chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
Instructions
- Lightly brown rice in oil in a large skillet.
- Add onions and peppers. Saute until tender.
- Add the tomato sauce, chicken broth, salt, and pepper and cover tightly.
- Simmer 30-40 minutes until rice is tender.
