    I found this recipe at www.shelsgarden.com. This is great with fresh purple-hull peas.


    List of Ingredients


    • 1 qt. fresh shelled purple-hull, crowder, or lady peas
    • 1 whole onion
    • salt and pepper to taste
    • 1 tsp. sugar
    • 3-4 slices bacon, salt pork, or smoked ham


    Instructions


    1. Clean and rinse peas thoroughly.
    2. In a large saucepan, combine all ingredients and add enough water to just cover.
    3. Bring to a boil.
    4. Reduce heat and simmer for about 2 hours.
    5. You may let this sit, covered, until serving time.
