Tuna Casserole with Cheese Swirls

- 1/3 C. chopped red pepper
- 1/3 C. chopped onion
- 3 T. shortening
- 1/4 C. Bisquick
- 1 can cream of mushroom soup
- 1 1/2 C. milk
- 1 can tuna, drained
- 1 10 oz. pkg. frozen peas, thawed
- 1 T. lemon juice
- 2 C. Bisquick
- 1/2 C. cold water
- 3/4 C. shredded American or cheddar cheese
Instructions
- Preheat oven to 425 degrees.
- Cook and stir pepper and onion in hot shortening in 2qt. saucepan until tender.
- Stir in 1/4 C. Bisquick.
- Add soup; gradually stir in milk. Heat to boiling stirring constantly. Cook 1 min.
- Stir in tuna, peas and lemon juice.
- Pour into an oblong (about 12x8) baking dish . Keep hot in oven while preparing biscuits.
- Mix 2 Cups Bisquik and water to form a soft dough. Roll into 15x9 rectangle.
- Sprinkle with cheese.
- Roll up tightly, starting at wide side. Seal well.
- Cut into twelve 1 1/4 in. slices. Place cut side down on tuna mixture
- Bake 20 to 25 minutes. Serves 4 to 6.
Final Comments
If you've ever made cinnamon rolls, thats how you make the biscuits. Also the recipe originally called for green peppers but I prefer red ones.
