    Banana Nut Cake

    List of Ingredients


    • 2 tsp. lemon juice
    • Milk
    • 2 1/3 C. flour
    • 1 2/3 C. sugar
    • 1 1/4 tsp. baking powder
    • 1 tsp. baking soda
    • 1 tsp. salt
    • 2/3 C. shortening
    • 2/3 C. mashed fully ripe banana
    • 2 eggs
    • 2/3 C. chopped walnuts


    Instructions


    1. Place lemon juice in measuring cup. Add milk to make 2/3 cup. Set aside.

    2. Mix together flour, sugar, baking powder, baking soda and salt.

    3. Add shortening, bananas and sour milk. Mix until all flour is dampened. Beat 2 minutes.

    4. Add eggs, beat 2 minutes more.

    5. Stir in walnuts.

    6. Bake in greased and floured 13x9 pan at 350 deg. for 35 min. or until done.
