Broccoli Lasagna Roll-ups

Recipe Introduction
I always made this recipe in conjunction with Lasagna-the boys wouldn't eat broccoli. When done that way, you use exactly one box of lasagna noodles, 1 15oz. container of Ricotta, 1 8oz. pkg. of Pizza cheese, 1 jar of spaghetti sauce and 1 egg(I used 1/2 the beaten egg in each recipe).
List of Ingredients
- 6 Lasagna noodles, cooked
- 1 C. frozen chopped broccoli, cooked
- 1 C. Ricotta Cheese
- 1 egg, beaten
- 1/8 C. Parmesan cheese
- Spaghetti sauce
- 1/2 C. Pizza Cheese
Instructions
- Cook noodles for 15 min. Drain
- Mix together cooked broccoli, Ricotta, egg and Parmesan.
- Place some of the mix on each of the noodles and roll up.
- Spoon spaghetti sauce into 8x8 pan to cover bottom.
- Place rolls in pan. Spoon spaghetti sauce over top and sprinkle with Pizza cheese.
- Cover pan with aluminum foil and bake at 350 deg. for 50 min.
- Cool in pan 10 min. before serving.
