    List of Ingredients


    • 1 cut-up chicken
    • 1/2 C. flour
    • 1 tsp. salt
    • 1/8 tsp. pepper
    • 1/3 C. oil
    • 1 med. onion, chopped
    • 1 clove garlic
    • 1/2 C. mushrooms
    • 1 (16 oz.) can Tomato paste
    • 2 C. hot water
    • 1/2 tsp. thyme
    • 1/4 tsp. oregano
    • 1/4 C. parsely
    • 1/4 tsp. allspice
    • 2 tsp. salt
    • 1/4 C. white wine


    Instructions


    1. Coat chicken with flour, salt and pepper.
    2. Brown in hot oil in a Dutch oven.
    3. Push to the side and add onion, garlic and mushrooms. Cook and stir a few minutes.
    4. In a saucepan, combine tomato paste with hot water and seasonings. Heat till boiling.
    5. Pour over chicken and stir well.
    6. Cover and cook slowly 45 minutes.
    7. Uncover, add wine and simmer till ready to serve.
    8. Serve over pasta.
