Hrutka (Easter Cheese)

List of Ingredients
- 6 eggs
- 4 C. milk
- 2 tsp. orange, lemon, or vanilla extract
- 1/4 C. sugar
Instructions
- Pour milk into sauce pan.
- Break eggs into milk, making sure each egg yolk is broken.
- Add orange extract and sugar.
- Mix well (can blend in blender instead).
- Cook slowly, stirring frequently so the bottom doesn't scorch.
- Cook until mixture resembles scrambled eggs.
- Put a piece of cheese cloth over a large bowl. Pour in mixture.
- Gather up the sides of the cheese cloth and tie tightly to form a ball.
- Let drain for about one hour.
- Remove from bag and cool.
Final Comments
To drain,we always tied the other end of the string to a cabinet door knob and let it hang over the bowl.
