Vegetable Beef Soup

List of Ingredients
- 1 soup bone
- lb. roast
- 2 1/4 C. tomato juice
- 1/3 C. chopped onion
- 2 tsp. salt
- 2 tsp. worcestershire or soy sauce
- 1/4 tsp. chili powder
- 2 bay leaves
- 1 C. green beans
- 1 C. corn
- 1 C. peas
- 1 C. carrots
- 1 C. diced potatoes
Instructions
- Combine soup bone, meat, tomato juice, onion, seasonings and 6 Cups water in a stock pot.
- Cover and simmer 2 hours.
- Remove soup bone, meat and bay leaves. Cut meat into bite-size pieces.
- Add meat and vegetables to broth. Cover and simmer 1 hour.
Final Comments
You can use any vegetables in this recipe as you prefer: fresh, canned or frozen. If using frozen mixed soup vegetables, use a 1 lb. bag.
