    Vegetable Beef Soup

    List of Ingredients


    • 1 soup bone
    • lb. roast
    • 2 1/4 C. tomato juice
    • 1/3 C. chopped onion
    • 2 tsp. salt
    • 2 tsp. worcestershire or soy sauce
    • 1/4 tsp. chili powder
    • 2 bay leaves
    • 1 C. green beans
    • 1 C. corn
    • 1 C. peas
    • 1 C. carrots
    • 1 C. diced potatoes


    Instructions


    1. Combine soup bone, meat, tomato juice, onion, seasonings and 6 Cups water in a stock pot.

    2. Cover and simmer 2 hours.

    3. Remove soup bone, meat and bay leaves. Cut meat into bite-size pieces.

    4. Add meat and vegetables to broth. Cover and simmer 1 hour.



    Final Comments


    You can use any vegetables in this recipe as you prefer: fresh, canned or frozen. If using frozen mixed soup vegetables, use a 1 lb. bag.
