    Zucchini Pizza Casserole

    Adapted from Chef Ron Lock

    List of Ingredients


    • 4 Cups shredded zucchini
    • 1/2 tsp salt
    • 2 eggs
    • 2 Tbsp. parmesan cheese
    • 1/2 C. pizza cheese
    • 1 tsp. Italian seasoning
    • 1 lb. ground beef
    • 2 oz. pepperoni, cut slices in fourths
    • 2 Cups spaghetti sauce
    • 1 1/2 C. pizza cheese
    • 1 med. bell pepper, diced
    • 1 sm. can sliced mushrooms


    Instructions


    1. Place shredded zucchini in a colander and sprinkle with salt. Let drain 15 min then squeeze out the moisture.

    2. Combine the zucchini, eggs, Parmesan and 1/2 C Pizza cheese.

    3. Press into a greased 9x13 baking dish. Bake for 20 minutes at 400 deg.

    4. While the crust is baking, brown the ground beef. Drain. Stir in pepperoni, sauce and Italian seasoning. Simmer for 5 minutes.

    5. When crust is done, pour on the meat sauce. Top with 1 1/2 C Pizza cheese, bell pepper and mushrooms.

    6. Bake for 20 more minutes. Let stand 5 minutes before serving.
