Zucchini Pizza Casserole

List of Ingredients
- 4 Cups shredded zucchini
- 1/2 tsp salt
- 2 eggs
- 2 Tbsp. parmesan cheese
- 1/2 C. pizza cheese
- 1 tsp. Italian seasoning
- 1 lb. ground beef
- 2 oz. pepperoni, cut slices in fourths
- 2 Cups spaghetti sauce
- 1 1/2 C. pizza cheese
- 1 med. bell pepper, diced
- 1 sm. can sliced mushrooms
Instructions
- Place shredded zucchini in a colander and sprinkle with salt. Let drain 15 min then squeeze out the moisture.
- Combine the zucchini, eggs, Parmesan and 1/2 C Pizza cheese.
- Press into a greased 9x13 baking dish. Bake for 20 minutes at 400 deg.
- While the crust is baking, brown the ground beef. Drain. Stir in pepperoni, sauce and Italian seasoning. Simmer for 5 minutes.
- When crust is done, pour on the meat sauce. Top with 1 1/2 C Pizza cheese, bell pepper and mushrooms.
- Bake for 20 more minutes. Let stand 5 minutes before serving.
