    2 envelopes unflavored gelatin
    1/2 cup sugar
    1/4 tsp. salt
    1 tbs. instant coffee
    1 3/4 cups milk
    6 oz. semi-sweet chocolate
    3 egg yolks
    1 tsp. vanilla
    3 egg whites
    1/4 cup sugar
    1 cup heavy cream
    20 chocolate wafers
    1/4 cup almonds

    Recipe



    Combine gelatin, 1/2 cup sugar, salt, coffee, milk and chocolate in pan. Cook low, stirring constantly. Beat yolks. Stir in half of chocolate mixture slowly. Return to pan. Stir and cook three minutes. Remove. Stir in vanilla and chill until slightly thickened. Beat whites and gradually add 1/4 cup sugar. Fold meringue into chocolate mixture. Gently fold in whipped cream. Line bottom and sides of 9-inch springform pan with wafers. Spoon mixture into pan slowly. When cookies are secure, pour rest. Sprinkle with toasted almonds. Refrigerate four hours.
