2 tbs. butter
3 lb. broiler
1/2 cup Chablis
1/4 tsp. tarragon
pinch thyme
1/2 tsp. salt
1/4 tsp. pepper
2 egg yolks
2 tsp. sour cream
3 tsp. Dijon mustard
pinch cayenne
bay leaf
Recipe
Melt butter. Add chicken and brown. Add wine, tarragon, thyme, bay leaf, salt and pepper. Bring to boil. Cover and simmer 45 minutes. Discard bay leaf and remove meat. Beat yolks into sauce and add sour cream, mustard and cayenne. Heat stirring constantly but do not boil. Replace meat and simmer five minutes.
