    Honey-Mustard Turkey Meatballs

    List of Ingredients

    1 egg, lightly beaten
    3/4 cup crushed low-fat butter flavored crakers
    1/2 cup shedded low-fat mozzarella cheese
    1/4 cup onion, chopped
    1/2 teaspoon ground ginger
    6 tabespoons Dijon mustard, divided
    1 lb ground turkey breast
    1 1/4 cup unsweetened pineapple juice
    1/4 cup chopped green pepper
    2 tablespoon honey
    1 tablespoon cornstarch
    1/4 teaspoon onion powder

    Recipe

    In bowl, Combine egg, cracker crumbs, chesse, onion, ginger and 3 tablespoons mustard; add meat and mix well.

    Form into 30 balls, 1 inch. Place in a greased 13x9x2inch baking dish. Bake uncovered, at 350 for 20 to 25 minutes or until juices run clear.

    In a saucepan, combine pineapple juice, green pepper, honey, cornstarch and onion powder; bring to boil, stirring constantly. Cook and stir 2 mintues more, reduce heat, Stir in remaining mustard until smooth. Brush meatball with about 1/4 cup suace and return to oven for 10 minutes,

    Serve remaining sauce as dip for meatballs

    2 1/2 dozen serving size
    4 points per 3 meatball
