    2 medium tomatoes, blanched, peeled, seeded and diced
    1/2 medium avocado, peeled and diced
    1/2 cup diced onion
    1 medium pickled jalapeno pepper, drained, seeded and minced (reserve 1 tablespoon
    liquid)
    2 tablespoons minced fresh cilantro
    1 tablespoon fresh lime juice

    Recipe



    In small bowl, combine tomatoes, avocado, onion, pepper and reserved liquid, cilantro
    and lime juice; refrigerate, covered, until chilled.
