    List of Ingredients




    2 cups diced watermelon (1/2" pieces), seeded
    1/2 medium yellow bell pepper, seeded and diced
    1/4 cup finely chopped onion
    1 tablespoon chopped fresh cilantro
    Juice of 2 fresh limes
    4 tilapia fillets, 6 oz. each
    Freshly ground black pepper to taste

    To prepare salsa, in medium bowl combine watermelon, bell pepper, onion, cilantro, and lime juice. Refrigerate, covered, for about one hour.

    Preheat broiler or barbecue grill following manufacturer's directions. Rinse fish and pat dry; sprinkle both sides with black pepper. Place on broiler pan, in grilling basket, or over hot coals; cook, turning once, until fish flakes easily when tested with a fork.

    Transfer fish to serving platter; serve topped with salsa.
