    6 ounces French bread, split lengthwise
    1/2 cup packed fresh basil leaves
    1/4 cup part-skim ricotta cheese
    1 garlic clove, pressed
    1/2 teaspoon freshly ground pepper

    Recipe



    Preheat oven to 400o F. Line baking sheet with foil.
    Place bread halves cut side up on prepared baking sheet; bake 5 minutes, until slightly
    crisp. Leave oven on.
    In food processor or blender, combine basil, ricotta cheese, garlic and pepper; puree
    until smooth. Spread half of the ricotta cheese mixture on each bread half; bake 15
    minutes, until hot and very crispy.

    EACH SERVING PROVIDES: 1/4 Protein, 1 1/2 Breads

    PER SERVING: 145 Calories, 3 g Total Fat, 1 g Saturated Fat, 5 mg Cholesterol, 279 mg
