    1 1/2 ounces shredded part-skim mozzarella cheese
    4-6 medium garlic cloves, minced
    1/4 teaspoon freshly ground black pepper
    3/4 ounce freshly grated Parmesan cheese
    4 ounces French bread, halved horizontally
    1/2 cup minced fresh basil

    Recipe



    Preheat grill for a medium fire, using direct method (see Cooking Methods).
    In small bowl, combine mozzarella and Parmesan cheeses, basil, garlic and pepper;
    toss well. Sprinkle cheese mixture over cut sides of bread; with fingers, press firmly
    onto bread. Close the bread, sandwich style; wrap in heavy-duty aluminum foil.
    Grill bread, turning once, until hot and cheese is melted, 8-10 minutes. Remove foil
    and cut bread into 8 slices. Serve immediately.

    SERVING (TWO 1/2-OUNCE SLICES) PROVIDES: 3/4 Protein, 1 Bread.
