    List of Ingredients




    1 c. applesauce
    2 c. puffed seven grain cereal, Kashi
    1 1/4 c. flour
    1/4 c. dry milk
    2 T. wheat germ
    1 t. baking soda
    1 t. cinnamon
    1/2 t. salt
    1 c. frozen or fresh blueberries
    3/4 c. packed brown sugar
    1/3 c. chopped dried apricots
    1/3 c. canola oil
    1 t. vanilla
    2 large egg whites
    cooking spray

    Recipe



    1. Preheat oven to 350 degrees.

    2. Spoon applesauce onto several layers of heavy-duty paper towels, and spread to a 1/2 inch thickness. Cover applesauce with additional paper towels, let stand 5 minutes.

    3. Place cereal in a food processor, pulse until coarsely ground. Lightly spoon flour and next 5 ingredients to processor, and pulse to combine.

    4. Scrape applesauce into processor using a rubber spatula. Add blueberries, sugar, apricots, oil, vanilla, and egg whites, pulse until combined. Spread the batter into a 13x9 inch baking pan coated with cooking spray. Bake at 350 degrees for 30 minutes or until wooden toothpick comes out clean. Cool completely. Makes 2 dozen bars.
