1 cup egg substitute (egg beaters)
1/4 cup shredded reduced fat cheese (such as Sargento light shredded cheese)
2 slices turkey bacon, cooked, crumbed
1/4 red bell pepper, chopped
2 (10inch) fat-free flour tortillas, warmed
1/4 cup salsa (optional)Recipe
In medium non-stick skillet sprayed with cooking spray, over medium heat, cook egg product, mix in bacon and bell pepper; stirring occasionally until set. Divide egg mixture evenly between tortillas; top with cheese and salsa (optional). Fold bottom up 1/3, then fold one side over egg between eggs and other side of tortilla, fold other side over.
