1/4 cup apple butter
1/4 cup vegetable oil
1 egg
2 teaspoons vanilla
1-1/4 cups all-purpose flour
3/4 cup Equal® Sugar Lite™
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup shredded carrots
1/4 cup seedless raisins
1/4 cup well-drained crushed pineapple
CREAM CHEESE FROSTING:
2 ounces reduced fat cream cheese, softened
2 tablespoons stick butter, softened
1 cup confectioners sugar
½ teaspoon vanilla
Recipe
Combine apple butter, oil, egg and vanilla on medium speed of mixer until well blended. Stir in combined flour, Equal® Sugar Lite™, baking soda, cinnamon and salt until combined. Fold in carrots, raisins and pineapple just until blended.
Spread batter into an 8-inch square baking pan well sprayed with non-stick cooking spray. Bake in preheated 350°F oven 30 to 35 minutes or until wooden pick inserted near center comes out clean. Cool completely on wire rack.
For Frosting, beat cream cheese and butter on medium speed of mixer until well-blended. Mix in vanilla. Gradually beat in confectioners sugar until light and fluffy.
