    List of Ingredients




    2 Tbsp flour
    1 box (1 pound) pound cake mix
    1/2 cup fat-free egg substitute
    1 medium orange
    1/4 cup fresh or frozen berries, (blackberries, blueberries, or strawberries)
    1 tsp sugar
    1 – 2 drops vanilla extract

    Pre-heat oven to 350F. Coat 2 (8-inch) loaf pans with cooking spray. Dust pans lightly with the flour and set aside.

    Finely grate rind of orange into medium mixing bowl. Add cake mix and egg substitute to orange rind. In measuring cup, squeeze juice of the orange and add enough water to equal 3/4 cup liquid. Add to cake mixture.

    Using electric mixer, follow package directions to mix cake. Place half of batter in each loaf pan. Bake 25 to 30 minutes or until wooden pick inserted comes out clean.

    Place on wire racks to cool 10 minutes. Remove from pans and cool completely. Slice each loaf into 8 slices and wrap each loaf in plastic for freezing. Store in freezer until needed.

    To serve, take 1 slice cake from freezer. Leave remaining slices frozen for later use.

    Place frozen berries in microwavable bowl and microwave on HIGH for 15-20 seconds or until thawed. Stir sugar and vanilla into berries. Top cake slice with berry mixture.
