1 pound chicken breast, skinless, boneless, cut into thin strips
3 tablespoons hoisin sauce
2 tablespoons cornstarch
1/2 cup low-sodium chicken broth
2 tablespoons rice vinegar
2 tablespoons sugar
2 teaspoons chilli-garlic sauce
1 tablespoon cannola oil
1 tablespoon fresh ginger, minced
2 garlic cloves, minced
1 green bell pepper
2 medium carrots thinly sliced on a diagonal
1/4 cup unsalted, dry roasted peanutsRecipe
Combine the chicken, 1 tablespoon of the hoisin sauce, and 1 tablespoon on the cornstarch in a medium bowl; toss well to coat and set aside. Combine the remaining 2 tablespoons hoisin sauce, 1 tablespoon cornstarch, the broth, vinegar, sugar,and chili-gralic sauce in a small bowl, set aside.
Heat a nonstick wok or a large deep skillet over medium-high heat until a drop of water sizzles. Swirl the oil, then add chciken, Stir-fry until almost cooked through, 2'3 minutes. Add the ginger and garlic; stir-fry until fragrant, about 15 seconds. Add the bell pepper, carrots and hoisin mixture and cook, stirring constantly, until the mixture boils and thickens, and the chicken is cooked through, about 1 minute.
