3 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
8 ounces light butter -- room temperature
2 cups sugar
2 large eggs
1 tablespoon vanilla Recipe
Sift dry ingredients together.
Beat butter and sugar until fluffy.
Beat in eggs one at a time, scraping down bowl each time, then add vanilla.
Add flour mixture and mix at low speed until dough just comes together.
Knead a couple of times just until smooth, then pat into a flat disk, wrap in plastic and chill until firm enough to roll. Or roll into a log to be sliced into cookies.
Roll and cut as desired.
Bake at 350 about 8-10 minutes on parchment lined sheets.
