    Crockpot Tropical Pork Dinner

    2 lbs. pork tenderloin
    1 20oz. can crushed pineapple
    1/4 c. honey
    1/4 c. apple cider vinegar
    1/4 c. packed brown sugar
    4 large washed yams/sweet potatoes

    Recipe



    Coat the crockpot/slow cooker with non fat cooking spray.
    Place the pork tenderloin into the crockpot. Mix the crushed pineapple, honey, vinegar, and brown sugar together until well combine. Spoon over top of the tenderloin. Place the yams on top of the meat mixture.
    Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours.

    Slice the tenderloin and cut the yams in half before serving. Spoon a little sauce over the yams and meat when serving, if desired.


    8 servings, (3 ounces of the meat, 1/2 of a yam and 3 ounces of the sauce mixture.)
