    4 apples, peeled, cored and sliced
    2 tablespoons sugar
    1 tablespoon fresh lemon juice
    3/4 cup buttermilk baking mix
    1/4 cup low-fat buttermilk
    1/2 teaspoon ground cardamom

    Recipe



    Preheat the oven to 350 degrees; spray a 1-quart baking dish with nonstick cooking spray.

    In a medium saucepan, combine the apples, 1 tablespoon of the sugar and the lemon juice; bring to a boil. Reduce the heat and simmer, stirring constantly, until the apples are soft, about 5 minutes. Pour into the baking dish.

    In a small bowl, combine the baking mix, buttermilk, the remaining tablespoon of sugar and cardamom; stir until smooth. With a spoon, drop the batter over the fruit. Bake until browned, 20-25 minutes. Serve warm.

    Per serving: 191 calories, 4 g fat, 3 g fiber. Points = 4.
