    Baked Cod with Sweet Onions

    List of Ingredients




    1 1/2 pound cod fillets
    1/4 cup balsamic vinegar
    1/4 cup lemon juice
    3 Tablespoons olive oil
    1/2 cup fresh basil- chopped
    1/2 sweet onion- chopped
    2 garlic cloves- chopped
    Additional basil for garnish (optional)

    Recipe



    Preheat oven to 325 degrees Fahrenheit.
    Clean cod fillets and paper towel dry. Place fillets in shallow oven pan.
    Mix together next 6 ingredients.
    Pour mixture over fillets and let marinate for about 1 hour in the refrigerator.
    Bake in oven for 20-25 minutes (or until the fish flakes and is cooked throughout).
    Garnish with fresh basil (if desired)
