    4 med all purpose potatoes, peeled and chunked
    3 onions, diced
    2 celery stalks, diced
    1 red bell pepper, seeded and diced
    8 garlic cloves, chopped
    1 tsp dried thyme leaves
    1/2 tsp salt
    1 bay leaf
    1 1/4 lb cod fillets, cut into 2" chunks
    1/4 cup chopped parsley
    2 T fresh lemon juice
    1/2 tspfreshly ground pepper

    Recipe



    In a med saucepan, combine the potatoes, onions, celery, bell pepper, garlic, thyme, salt, and bay leaf with 4 cups water; bring to a boil. Reduce the heat and simmer covered until the otatoes are just tender 15-20 min. Transfer 2 cups of the vegetables and about 1 cup of the cooking liquid to a food processor or blender, puree.

    Return the puree to the saucepan and bring to simmer. Add the cod; cook until just opaque in the center 3-4 min. Gently stir in the parsley, lemon juice and pepper; discard the bay leaf.

    Per serving: 281 cal, 1 g total fat, 0 g saturated fat, 61 mg cholesterol, 399 mg sodium, 38 g total carb, 5 g dietary fiber, 30 g protein, 90 mg calcium.
