List of Ingredients
1 1/4 cups unbleached or all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/3 cup sugar
2 large eggs
1/3 cup vegetable oil
1 cup grated carrots
1 small Granny Smith apple, grated with peel
1/2 cup golden raisins
1/2 cup chopped dates
1/3 cup sliced almonds
1/3 cup unsweetened coconut (optional) Recipe
Preheat the oven to 350*> Coat a 12 cup muffin pan with nonstick spray or
line with paper liners.
In small bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, combine sugar, eggs, and oil. Stir sugar mixture into flour
mixture just until moistened. Stir in carrots, apple, raisins, dates,
almonds, and coconut, if using.
Spoon batter into the prepared pan until each muffin cup is 3/4 full. Bake
20 min., or until a wooden pick inserted in center of a muffin comes out
clean.
Keeps 5 days in the refrigerator and 4 months in the freezer.
