1/4 c. pure maple syrup
2 TB dijon-style mustard
1-2 tsp. cider vinegar
1/4 tsp pepper
1 med acorn squash
1 tsp. olive oil

For glaze, in small saucepan combine maple syrup, mustard, vinegar, and pepper. Cook over low heat until slightly thickened, stirring occasionally. Meanwhile, cut squash in half lengthwise; remove seeds. Lightly brush cut surfaces with olive oil. Sprinkle with salt if desired. Place squash cut side down on grill rack. cover and grill for 15 mins. Add pork chops to grill. Cover and grill for 25 mins, turning after 18 mins. Turn squash cut side up; brush chops and squash with glaze. Cover and grill 10-15 mins more or until squash is tender and chops are slightly pink in center and juices run clear. To serve, cut each squash halve in 2 wedges.
