    Peppered Pork with Corn Relish

    points 6 (1 chop, 1/2 cup relish)

    List of Ingredients




    Cooking Spray
    4 (4 ounce) boneless center-cut pork chops (about 1/2" thick)
    2 tablespoon jalapeno pepper jelly, divided
    1 1/2 cup frozen whole-kernal corn, thawed
    1/2 cup chopped red bell pepper
    1/3 cup chopped green onions

    Recipe



    Heat a large nonstick skillet coated with cooking spray over medium heat. Add pork; top evenly with 1 T. jelly. Cook pork for 3 minutes on each side. Remove pork from pan and keep warm.
    Add remaining 1 T. jelly to pan; cook over low heat, stirring constantly, until melted. Add corn, red bell pepper and green onions; cook over medium-high heat, stirring constantly, 2 minutes. Add pork, and cook 3 minutes or until pork is done.

    Yield: 4 servings(serving size is 1 chop and 1/2 c. relish) Per serving: Calories-268, Fat-8.8 g, Fiber-2.0 g.
