    Mashed Potatoes with Roasted garlic

    List of Ingredients

    1 1/2 pounds baking potatoes
    7 garlic cloves, peeled
    1/3 cup low-fat milk
    2 tablespoons butter or margarine
    1/2 teaspoon sal1/4 teaspoon pepper
    Chopped Chives

    Recipe

    Preheat oven to 425.
    Pierce potatoes several times with fork. Wrap garlic in foil. Place potatoes and garlic on baking sheet; bake until potatoes pierce easily with fork and garlic is softened. about 45 minutes, Let cool until easy to handle, about 10 minutes.
    Using a knife, slit potatoes open; with a spoon, scoop out pulp and place in medium bowl.
    In small saucepan, mash garlic, add milk, butter, salr and pepper. Cook over low heat, stirring, until heated.
    Pour hot milk mixture over potatoes, mash together until smooth. Serve sprinkle with chives.

    6 servings (1/2 cup each)
