    1/4 cup dry bread crumbs
    1 teaspoon salt
    1 teaspoon ground cumin
    1 teaspoon paprika
    1 teaspoon chili powder
    1 teaspoon curry powder
    1/4 teaspoon pepper
    8 chicken thighs (about 5 ounces each), skin removed

    Recipe



    In a large resealable plastic bag, combine the first seven ingredients. Add chicken, a few pieces at a time, and shake to coat. Place on a baking sheet coated with nonstick cooking spray. Bake, uncovered, at 400° for 20 minutes. Turn chicken pieces; bake 15-20 minutes longer or until a meat thermometer reads 180°. Yield: 4 servings.

    Nutritional Analysis: One serving (2 chicken thighs) equals 323 calories, 16 g fat (4 g saturated fat), 131 mg cholesterol, 774 mg sodium, 6 g carbohydrate, 1 g fiber, 37 g protein. Diabetic Exchanges: 5 lean meat, 1/2 starch.
