Lemon Garlic Roasted Chicken

4 chicken breast, skinless
1/4 cup fresh lemon juice
1 1/2 tablespoon extra virgin olive oil
3 cloves garlic, minced
1 teaspoon oregano dried
1/2 teaspoon marjoram dried
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup water
Recipe
Combine lemon juice, 1 tbsp oil, garlic, oregano, marjoram, 1/2 tsp salt and 1/8 tsp pepper in a large bowl. Add chicken coat well and marinate 20 minutes.
Combine the remaining 1/2 tbsp oil, 1/4 tsp salt and 1/8 pepper in a medium bowl. Add potatoes and coat well. Place a wire rack in a roasting pan. Arrange potatoes on rack and roast 20 minutes.
Remove chicken from marinade, reserve marinade. Remove potatoes from oven and place chicken on wire rack. Add water to the reserved marinade and pour over chicken and potatoes, Roast chicken and potatoes 20 minutes. baste with pan juices, bake another 15 to 20 minutes, or until the juice of the chicken is clear.
4 servings ( one breast and 1/4 potaotes)

You could also use a whole chicken. I use the breast only, because it speeds up the cooking time.
