2 bone-in chicken breast halves (about 10 oz each)
salt & pepper to taste
2 Tbsp grate Parmesan or Romano cheese
2 Tbsp dry white wine or sherry [I used white wine]Recipe
Preheat the oven to 375F. Line a baking pan with heavy foil.
Remove the skin from the chicken. Arrange the breasts, rib side down in baking pan. Sprinkle with salt & pepper.
In a small bowl, make a paste of the cheese and wine or sherry; spread it evenly over the tops of the chicken.
Bake the breasts on the top shelf of the oven for 35-40 minutes, or until the chicken is glazed and browned and the juices are clear when breast is pierced with a fork.
