    Soft Shell Chicken Tacos

    1 lb ground chicken
    1 (1 1/2-oz) taco seasoning mix
    1/3 cup water
    10 (6-inch) soft wheat tortilla
    1 1/4 cups shredded lettuce
    4-oz (1 cup) Low-fat shredded cheddar cheese
    3/4 cup salsa

    Recipe



    Heat oven to 350. In medium skillet, brown chicken; srain. Stir in seasoning mix and water. Cook over medium heat for 10 to 15 minutes, stirring occasionally.

    Meanwhile, wrap tortillas in foil. Bake at 350 for 10 minutes or until warm.

    To assemble tacos, layer chicken mixture, lettuce, cheese and sala down center of each warm tortilla; fold over.

    10 tacos, 5 servings
    8 points per serving, (2 tacos)
