    Turkey Cutlets with Cherry sauce

    1 lb skinless, boneless, turkey breast fillets
    3 shallots, finely chopped
    1/4 cup balsamic vinegar
    1 1/2 cups cherries, pitted and chopped
    1/4 cup cherry all-fruit spread
    slt and pepper to taste

    Recipe



    Sprinkle turkey with salt and pepper. Spray large nonstick skillet with nonstick spray. Heat, Add turkey, cook over medium-high heat, turning once, until browned, about 3 mintues per side. Tranfer to plate, set aside.
    Add shallots to same skillet; reduce heat to medium. Cook stirring, until translucnet. Add vinegar; cook stirring until liquid reduces, 1-2 minutes. Stir in cherries and fruit spread; reduce heat to low. Let simmer until cherries soften and sauce thickens slightly, 2-3 mintues.
    Return turkey and accumulated jucies to skillet; simmer until turkey is cooked through, 1-2 mintues.

    4 servings
