Rich Chocolate Pudding

2/3 cup sugar
1/4 cup unsweetened cocoa powder
3 tablespoons cornstarch
2 cups reduced-fat (2%) milk
1 egg
1/2 teaspoon vanilla
1 tablespoon butter
Recipe
Combine sugar, cocoa and cornstarch in medium saucepan; whisk in milk. Cook over medium-high heat, stirring frequently, until mixture boils; boil 1 minute, stirring constantly.
Beat egg in small bowl. Whisk about 1/2 cup hot milk mixture into egg; whisk egg mixture back into saucepan. Cook over medium heat 2 minutes, stirring constantly.
Remove pudding from heat; stir in vanilla and butter. Pour into 4 individual serving dishes. Serve warm or cover and refrigerate until ready to serve.
Rich Mocha Pudding Add 1 to 1-1/2 teaspoons instant coffee crystals to sugar mixture in step 1.
Serving Suggestion Serve pudding with banana slices, mandarin orange segments and cookies. Or top with scoops of ice cream or frozen yogurt and a sprinkle of grated chocolate.
