    1 cup UNCLE BEN'S® Instant Brown Rice
    1 tablespoon margarine
    1/2 cup sliced yellow summer squash
    1/2 cup diced red bell pepper
    1/2 cup chopped green onions with tops
    2 eggs, lightly beaten
    2 teaspoons soy sauce

    Recipe



    Cook rice according to package directions.

    Melt margarine in medium nonstick skillet. Add squash, bell pepper and green onions; cook and stir over medium-low heat 5 minutes. Add eggs; cook and stir 2 minutes just until eggs are cooked.

    Add rice to vegetable mixture; sprinkle with soy sauce. Cover skillet and cook over low heat 5 minutes or until rice is hot.
