    1-3/4 cups water
    2/3 cup UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice
    1-1/4 cups sugar snap peas or snow peas
    1-1/4 cups sliced mushrooms
    1 cup halved cherry tomatoes
    1/3 cup reduced-fat Caesar salad dressing
    1/4 cup grated Parmesan cheese

    Recipe



    In medium saucepan, bring water and rice to a boil. Cover; reduce heat and simmer 20 minutes or just until tender.

    Meanwhile, stem peas and cut in 1/2-inch lengths. Combine peas and remaining ingredients in large bowl.

    Rinse rice under cold running water to cool; drain well. Add to vegetable mixture; toss to coat rice with dressing. Serve immediately or chill until ready to serve.
