2 c. chopped plum tomatoes
1 c. choppd Granny Smith apple
1/2 c. chopped cucumber
1/2 c. fresh corn kernels
1/2 c. chopped red bell pepper
1/4 c. chopped green onions
1/4 c. chopped red onion
2-1/2 T.chopped fresh cilantro
1-1/2 T. fresh lime juice
1 T. chopped seeded jalapeno pepper
1 T. balsamic vinegar
1-1/2 tsp. sugar
3/4 tsp. salt
1/2 tsp. freshly ground black pepper
Combine all ingredients, stirring well to combine. Serve at room temperature or chilled.
