    3 cups rolled oats
    1/4 cup honey
    1/4 cup frozen orange juice concentrate, thawed
    1/2 teaspoon cinnamon
    1/8 teaspoon ginger
    1/8 teaspoon nutmeg
    1/4 teaspoon almond extract
    1/4 teaspoon vanilla extract
    1 cup wheat germ
    1 cup dried fruit

    Preheat oven to 350 degrees. Line baking sheet with foil and spray with cooking spray. Spread oats on baking sheet and bake until oats are toasted, turning frequently, about 8-10 minutes. Combine honey and juice concentrate in small saucepan, cook over low heat until mixture is blended smooth. Spray 9x13 inch baking dish with cooking spray, pour honey mixture into dish. Add cinnamon, ginger, nutmeg, almond extract, and vanilla to honey mixture until well blended. Add toasted oats and toss until gently coated. Bake oat mixture 5-6 minutes, stirring frequently, until lightly browned. Remove from oven and let mixture cool in pan. When oat mixture is cooled stir in wheat germ and dried fruit, toss to mix. Great as snack or cereal with skim milk or yogurt.
