    1 orange
    2 cups fresh cranberries
    1 cup diced Red Delicious apple
    1 (8-ounce) can unsweetened crushed pineapple, drained
    1/3 cup sugar
    Fresh spinach leaves (optional

    Cut unpeeled orange into 4 pieces; remove seeds. Position knife blade in food processor bowl. Add orange and process until finely chopped. Transfer to a non-aluminum bowl; set aside. Place cranberries in food processor bowl; process until coarsely ground. Add cranberries and next three ingredients to chopped orange; stir well. Cover and refrigerate at least 8 hours. Serve on fresh spinach leaves, if desired.
