    List of Ingredients




    2 tsp olive oil
    1 onion, chopped finely
    1 carrot, diced
    1 zucchini, diced
    1/2 tsp salt
    1/4 tsp fresh ground pepper
    1 cup instant brown rice
    1 cup low-sodium chicken broth
    2 T. chopped parsley

    Recipe



    Heat oil in a large nonstick skillet over medium-high heat. Add the onion and carrot. Cook, stirring frequently, until tender about 6 minutes. Stir in the zucchini, salt and pepper; cook just until tender, about 3 minutes.

    Add the rice, broth and parsley; bring to a boil. Remove from the heat. Let stand, covered until the liquid is absorbed, about 5 minutes.
