    Almost From Scratch Pumpkin Pie

    List of Ingredients


    • 1 cup sugar (can use 1/2 white and 1/2 brown)
    • 1/2 tsp salt
    • 1 1/2 tsp saigon cinnamon
    • 1 tsp pumpkin pie spice (or more to taste)
    • 2 large eggs
    • 1 can (15 oz) Libby's Pure Pumpkin
    • 1 (12 oz) can evaporated milk
    • 1/2-1 tsp vanilla (to taste)
    • Pillsbury fresh pie dough
    • 1 pkg frozen pie tart shells


    Instructions


    1. Mix sugar, salt, cinnamon and spices in small bowl. Beat eggs in large, bowl. Stir in pumpkin and sugar and spice mixture. Gently add in milk and vanilla.
    2. Pour into big shell and into as many mini tarts as you can.
    3. Before baking take extra dough and cut shapes using mini cookie cutters and place along crust edges for a decorative touch.
    4. Sprinkle cinnamon on top of filling.
    5. Bake at 425 for 15 minutes. Reduce heat to 350 for 40-50 minutes or until pie no longer jiggles in center.
