Iced Apple Cookies

- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 1/3 cups brown sugar, packed
- 3/4 cups unsalted butter, softened
- 1 large egg
- 1 cup chopped pecan (optional)
- 1 cup red delicious apple, peeled and finely chopped
- 1 cup raisin (optional)
- 1/2 cup apple cider
- 2 T apple cider
- 3 cups confectioners sugar
Instructions
- Batter: Preheat oven to 350.
- Combine the flour, baking soda, cinnamon, salt, cloves, and nutmeg in a medium bowl.
- Cream the sugar and 3/4 cup butter in a large bowl until light and fluffy. Add the egg and beat until incorporated.
- Gradually add the flour mixture and beat until combined. Stir in the raisins, pecans, apples, and 1/4 cup apple cider.
- Drop by heaping tablespoons, 2 inches apart, onto parchment lined baking sheets. Flatten each slightly and bake 18-22 minutes. Cool on wire rack.
- In a small bowl, stir together the sugar, remaining cider and butter until smooth. Drizzle about 1T icing over each cookie.
- Store in airtight container for up to 4 days.
