    Island Pork Tenderloin

    Rub:

    1T paprika

    1T chili powder

    1 T dried oregano

    1 tsp kosher salt

    1/2 tsp red pepper flakes

    Combine ingredients. (I doubled for 2 tenderloins but didn't really double the red pepper flakes)



    Basting Sauce

    3/4 cup orange juice

    2 T fresh lime juice

    1 T garlic, minced

    1 tsp kosher salt

    1 habanero or serrano chile, seeded and minced (I used 2-3 jarred jalapeno slices because that is what i had on hand)

    2T honey

    1T evoo



    Recipe



    Combine ingredients for basting sauce and whisk in honey and evoo. (I just did it in my mini blender)



    Preheat broiler to high with rack in the center of oven. Prepare tenderloins with rub place on prepared pan (covered with foil with a cooling rack on top of the cookie sheet) Broil pork 3 minutes, baste with sauce, and broil 5 more minutes. Flip meat and baste and broil an additional 12-15 minutes, basting twice during that time. WHen pork reaches 145 in the thickest part, remove from oven and tent with foil and let rest for 5 minutes. Slice

    Grilling Option (My prefered method)

    Prepare grill for indirect heat (one side on high the other on low) Grill pork 12 minutes over high heat, turning and basting 4x. Finish over low heat for 15 minutes or until pork reaches 145 turning and basting twice.



    Note. Next time i might add a touch of brown sugar to the rub for a little sweetness.
