Cajun Fettucine

- 3/4lb dry fettucine
- 3/4 lb kielbasa, sliced
- 1/2 lb medium shrimp, peeled, deveined
- 1T garlic, minced
- 1/2 tsp cayenne or to taste
- 1/4 cup dry sherry
- 1 cup heavy cream
- 1/3 cup chicken broth
- 1 egg yolk, lightly beaten
- 1 cup frozen peas
- 1/3 cup parmesan, grated
- 1T unsalted butter
- sliced scallions
Instructions
- Bring a large pot of water to boil for the fettucine. Cook pasta according to pasta directions.
- Saute kielbasa in oil in a large saute pan over medium heat until brown. Add the shrimp and cook until just pink, about 1 minute. Stir in the garlic and cayenne; cook 30 seconds.
- Deglaze with sherry and simmer until nearly evaporated, about 1 minute.
- Whisk the cream, broth, and yolk together in a small dish, then add it to the pan along with the pan with the pasta and peas. Bring to a simmer, stir in parmesan, and cook until thick, about 1 minute. Finish with butter and scallions.
