    Easy Parmesan Orzo Recipe

    List of Ingredients


    • 1 tablespoon butter
    • 1 cup orzo
    • 1 1/4 cups chicken broth
    • 1 1/4 cups water
    • 1/4 cup grated fresh parmesan cheese
    • 2 tablespoons chopped fresh basil
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 4 teaspoons pine nuts, toasted


    Instructions


    1. Heat butter in medium saucepan over medium heat.
    2. Add orzo and cook 3 minutes stirring constantly.
    3. Stir in broth and water; bring to a boil.
    4. Reduce heat, simmer until liquid is absorbed and orzo is done (about 15 minutes)
    5. Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pinenuts.
    6. Serve immediately.


    Final Comments


    I omit pine nuts and add a some lemon zest. I have also used 1 tsp dried basil in place of fresh.
