Fettucine Alfredo

- 3/4 lb dry fettucine
- 2T unsalted butter
- 1 cup heavy cream
- 1/3 cup chicken broth
- 1 egg yolk
- 1/3 cup parmesan, grated
- salt and pepper to taste
Instructions
- Bring a large pot of water to boil for the fettucine. Cook pasta according to package directions.
- Melt butter in large saute pan over medium heat just before pasta is done. Drain the fettucine, then add it to the melted butter, tossing to coat.
- Whisk the cream, broth, and yolk together, then stir into the pasta Increase heat to medium high heat and bring to a simmer, stirring often. Cook until thickened, about 3 minutes.
- Off heat, stir in parmesan and season with salt and pepper.
