Chicken Saltimbocca

List of Ingredients
2 boneless skinless chicken breasts
salt and pepper
8 oz button mushrooms, halved
1/2 cup sweet marsala
1/2 cup beef broth
2 oz proscuitto
2T chopped fresh sage
2T unsalted butter
Recipe
Pound out chicken with a meat mallet until 1/4" thick. Season both sides with salt and pepper. Saute chicken in oil in a saute pan over med high heat until browned, 3-5 minutes. Turn and cook 2 more minutes then transfer to a plate and tent with foil to keep warm. Cook mushrooms in the same pan over high heat until beginning to brown, 5 min. Add add'l oil as needed to to prevent burning. Deglaze with marsala, scraping any brown bits, then add broth and bring to a boil. Simmer until liquid is reduced by half 5 min. Off heat stir in proscuitto, sage and butter until butter melts. Season with salt and pepper.
